Here’s another Instagram recipe I transcribed, this time for tomato soup.
Equipment

- Cutting board

Ingredients
Remember to wash all the vegetables!
- 2 cartons cherry tomatoes
- 2-3 heirloom tomatoes, quartered
- 5-7 slicing or roma tomatoes, quartered
- 1 red bell pepper, sliced
- 1 orange bell pepper, sliced
- 1 yellow onion, quartered
- 2 heads garlic, peeled
- 5-6 sun dried tomatoes
- 2 tbsp Italian seasoning
- 1 tbsp salt
- 1 tbsp black pepper
- 1 cup milk
- 1 Parmesan rind
- 1 cup Parmesan cheese
Instructions
- Preheat the oven to roast at 375ºF.
- Place all the vegetables and seasonings onto a baking tray.
- Drizzle with olive oil.
- Roast for 45 minutes.
- Transfer to a blender, add basil, and blend.
- Transfer to a pot on the stove on medium heat.
- Add milk, Parmesan rind, and Parmesan cheese.
- Reduce for a few minutes, and season to taste.
