Tomato soup

Here’s another Instagram recipe I transcribed, this time for tomato soup.

Remember to wash all the vegetables!

Instructions

  1. Preheat the oven to roast at 375ºF.
  2. Place all the vegetables and seasonings onto a baking tray.
  3. Drizzle with olive oil.
  4. Roast for 45 minutes.
  5. Transfer to a blender, add basil, and blend.
  6. Transfer to a pot on the stove on medium heat.
  7. Add milk, Parmesan rind, and Parmesan cheese.
  8. Reduce for a few minutes, and season to taste.
